What methods fastest? and How long does it usually take you to make a baby blanket or a throw? Crochet, knitting? I don't like quilting. I dont care if its plain just something basic please. So far I've just been crocheting granny squares and I feel like I'll never finishing.

The quickest way to make a blanket would be to get a very large piece of felt, maybe edge it with strips of cotton fabric, voila blanket. Crafts like knitting, crochet and sewing all depend on your skill level, so I (a decent knitter but a beginner crocheter) could knit a baby blanket in maybe two weeks of spare time, 8 days knitting constantly but would take months to crochet one. If you're already accomplished in a particular craft then pick that one but don't start a craft with such a massive project!
Rather than make the whole thing yourself why don't you ask other friends of the mother to contribute, even the mother herself could join in. Set up a session at your house where everyone gets together for a coffee and gossip and makes granny or knitted squares at the same time. At the end all the different squares can be crocheted together into a full blanket for the baby.

I'm planning on making a patchwork quilt for a baby. We've just found out she is having it, so I have plenty of time to learn and practice. Are there any good websites or books I can use? Thank you :)

Measure, cut and sew with accuracy and the projects will be successful.
Most books and tutorials will recommend using a rotary cutter and mat. These cutters are rolling razor blades and you need to be extremely cautious when using one. You can get the same accuracy using scissors.
